Tucked away in the heart of Beijing, Chī Wagyū is led by Chef Tetsuya Yamamoto, a 20-year veteran of Japanese cuisine and a self-proclaimed “wagyu obsessive.” Trained in a Michelin-starred ryōtei in Osaka, he deconstructs A5 wagyu with almost fanatical precision—from the slicing angles that follow Miyazaki beef marbling veins, to millimeter-level of control over the heat of binchōtan charcoal.
In a space framed by Edo Kiriko glass and a hinoki wood bar, you can taste freezing-aged sirloin, binchōtan-smoked wagyu sushi, hidden menu “whisky shabu shabu”, and more—each dish a tribute to the richness and precision of wagyu.
